Battle of the Bluberry Baking Contest Winners

First Place: Blueberry Cake--From the kitchen of Pamela Given

Cream Together:

  • 1/2 c. butter
  • 2 c. sugar
  • 2 eggs
Add: 
  • 3 1/4 t. flour
  • 1 t. cream of tartar
  • 1/2 t. baking soda
  • 1 c. milk

Fold in 3 cups blueberries.

Spread mixture into 9x13 greased pan.  Sprinkle top with mixture of cinnamon and sugar.

Bake at 350 degrees for approximately 50 minutes.

 

Second Place: Blueberry, choclate, goat cheese crepes--An original creation from the kitchen of Keri Ross 

For all Crepes

  • 1 c. all purpose flour
  • 1/4 t. salt
  • 4 eggs
  • 1 T. sugar
  • 1 1/2 c. whole milk
  • 3 T. unsalted butter, melted

Blend all ingredients together and let rest in refrigerator over night.

For the blueberry filling

  • 1 pint fresh blueberries
  • 1/4 c. orange juice
  • lemon zest to taste
  • 1 c. crumbled organic plain goat cheese

Reduce blueberries, juice, and zest over low heat until bubbling (for garnish, remove a few berries before they pop if you wish). remove from heat.  When cooled to warm, mix in the goat cheese.

For the chocolate filling

  • 8 oz. 70% dark choclate pieces
  • 1 c. cream
  • 3 T. butter

Melt ingredients together on low heat.
